Da Milano al Dorset (UK) con amore… per la cucina!

Ho deciso di dedicare questo mio secondo appuntamento dell’angolo-cucina di MaQ ad una signora milanese, una vera ambasciatrice della cucina italiana all’estero e a mio avviso, signora di stile. Ho letto di lei per caso, tra le pagine di un noto mensile di cucina e ne sono rimasta affascinata. Sto parlando di Anna Del Conte. Molti di voi non la conosceranno ma per il popolo inglese è un vero mito… al pari degli altrettanto noti Nigella Lawson https://it.wikipedia.org/wiki/Nigella_Lawson e Jamie Oliver https://it.wikipedia.org/wiki/Jamie_Oliver.

Nata a Milano da una famiglia della buona borghesia, si trasferisce in Inghilterra come ragazza alla pari. Non tornerà più indietro tanto che ci risiede ormai da più di 60 anni. Il suo primo approccio con il cibo inglese non fu esattamente un “colpo di fulmine” (erano gli anni ’50); la popolazione, in fase post-conflitto mondiale, non era dell’idea di spendere troppo per il cibo, c’era poca scelta alimentare anche se di buon livello.

Abituata alla qualità dei piatti che gustava in famiglia, Anna decise di portare il proprio contributo, di appassionata della cucina italiana, cominciando a scrivere di cibo e un fortunato incontro con un editore diede il via a una lunga carriera di “cookery writer” https://en.wikipedia.org/wiki/Food_writing. Nel posto giusto, al momento giusto.

Libro dopo libro (ne ha scritti più di 20) l’autorevolezza di Anna Del Conte si è confermata nel tempo, grazie alla capacità di trasmettere con ironia, eleganza e conoscenza le ricette del suo paese d’origine Possiamo tranquillamente affermare che se il modo di mangiare da parte del popolo anglosassone è migliorato e il cibo italiano più apprezzato, lo dobbiamo all’opera divulgativa di Anna Del Conte.

In questa occasione le ricette da proporvi in chiave un-traditional erano moltissime ma ho preferito scegliere un antipasto della tradizione che la fa da padrone negli happy hour https://it.wikipedia.org/wiki/Happy_hour milanesi e che lega con un filo invisibile ma fortissimo, Milano all’Inghilterra: la bruschetta https://it.wikipedia.org/wiki/Bruschetta, molto popolare ed apprezzata in entrambi i Paesi. Fondamentale è la scelta delle materie prime! La ricetta è in chiave rivisitata anzi… cre-attiva!

LA BRUSCHETTA… NEL BICCHIERE!

Ingredienti per 4 persone: 400 g di pomodori tipo Pachino, 1 filoncino di pane tipo ciabatta, 3 spicchi di aglio, olio evo, un mazzetto di basilico, pepe nero, 1 cipolla di Tropea di media misura, zucchero di canna, sale, 8 bicchieri trasparenti da finger food.

Procedete così: lavate ed asciugate i pomodori, la cipolla e il basilico. Tagliate i pomodori a pezzi piccoli; scolate l’acqua in eccesso e riuniteli nel bicchiere del mixer. Lasciate da parte qualche dadino intero. Unite 5 foglie di basilico, una punta d’aglio, sale e pepe a gusto.

Frullate grossolanamente per 10″. Riponete in frigo. A parte tagliate a fette la cipolla, stufatela in tegame con poco olio, un cucchiaio di zucchero di canna, un cucchiaio di acqua, un pizzico di sale, fino a quando non si sarà ammorbidita.

Nel frattempo mettete a scaldare una piastra. Affettate il pane che strofinerete di aglio e bagnerete con poco olio. Tostate velocemente sulla griglia facendo attenzione a non bruciare le fette. Riducetele a dadini e tenete da parte.

Componiamo la bruschetta in questo modo: disponete una piccola base di pane a dadini sul fondo, versate 2-3 cucchiaini di pomodoro, altri dadini di pane, la cipolla caramellata, 1/2 cucchiaio di olio, una foglia di basilico.
